Description

This vibrant Winter Kale & Pomegranate Salad is a nutrient-rich, flavorful dish featuring massaged kale, juicy pomegranate seeds, citrusy oranges, crunchy walnuts, and creamy goat cheese. Tossed in a tangy homemade pomegranate vinaigrette, this salad is perfect as a healthy side dish or a light meal.


Ingredients

  • For the Salad:
    • 2 bunches kale (about 68 cups, chopped)
    • 1 tbsp olive oil
    • Pinch of salt & pepper
    • 4 oz goat cheese (crumbled)
    • 1 cup pomegranate seeds
    • 1 cup mandarin orange segments
    • ½ cup walnuts (chopped or candied)
  • For the Pomegranate Vinaigrette:
    • ¼ cup red wine vinegar
    • ¼ cup pomegranate juice
    • 1 tsp garlic paste
    • ½ tbsp maple syrup or honey
    • 1 tsp Dijon mustard
    • ¼ cup extra virgin olive oil
    • Salt (to taste)

Instructions

  • Prepare the Kale: Remove the stems, chop the kale, and place it in a large bowl.
  • Massage the Kale: Drizzle with olive oil and a pinch of salt. Massage for 1-2 minutes to soften.
  • Assemble the Salad: Add pomegranate seeds, orange segments, walnuts, and crumbled goat cheese.
  • Make the Dressing: In a jar, combine red wine vinegar, pomegranate juice, garlic, maple syrup, Dijon mustard, olive oil, and salt. Shake well.
  • Toss and Serve: Pour the dressing over the salad and toss well. Garnish with extra toppings if desired.

Notes

  • For extra crunch, add roasted pumpkin seeds or crispy chickpeas.
