- 1 tbsp olive oil
- Pinch of salt & pepper
- 4 oz goat cheese (crumbled)
- 1 cup pomegranate seeds
- 1 cup mandarin orange segments
- ½ cup walnuts (chopped or candied)
- For the Pomegranate Vinaigrette:
- ¼ cup red wine vinegar
- ¼ cup pomegranate juice
- 1 tsp garlic paste
- ½ tbsp maple syrup or honey
- 1 tsp Dijon mustard
- ¼ cup extra virgin olive oil
- Salt (to taste)
Instructions
- Prepare the Kale: Remove the stems, chop the kale, and place it in a large bowl.
- Massage the Kale: Drizzle with olive oil and a pinch of salt. Massage for 1-2 minutes to soften.
- Assemble the Salad: Add pomegranate seeds, orange segments, walnuts, and crumbled goat cheese.
- Make the Dressing: In a jar, combine red wine vinegar, pomegranate juice, garlic, maple syrup, Dijon mustard, olive oil, and salt. Shake well.
- Toss and Serve: Pour the dressing over the salad and toss well. Garnish with extra toppings if desired.
