Description

A comforting and protein-packed White Bean Soup made with tender beans, fresh vegetables, and aromatic herbs. This one-pot meal is easy to prepare, nutritious, and perfect for any season.


Ingredients

  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 carrots, chopped
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth (or chicken broth)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • 2 cups kale or spinach, chopped
  • Juice of ½ lemon

Instructions

  • Heat olive oil in a large pot over medium heat. Add onions and sauté until soft.
  • Stir in garlic and carrots, cooking for another 2 minutes.
  • Add oregano, thyme, salt, and pepper, then pour in diced tomatoes, white beans, and broth. Stir well.
  • Bring to a boil, then reduce heat and let simmer for 15-20 minutes.
  • Stir in kale or spinach and cook for another 2 minutes until wilted.
  • Add lemon juice, adjust seasonings, and serve hot.

Notes

  • Blend a portion of the soup for a creamier consistency.
  • Add cooked chicken or turkey for extra protein.
  • Serve with crusty bread or garlic toast for a complete meal.
