Description
A comforting and protein-packed White Bean Soup made with tender beans, fresh vegetables, and aromatic herbs. This one-pot meal is easy to prepare, nutritious, and perfect for any season.
Ingredients

- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 carrots, chopped
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth (or chicken broth)
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt & pepper to taste
- 2 cups kale or spinach, chopped
- Juice of ½ lemon
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and sauté until soft.
- Stir in garlic and carrots, cooking for another 2 minutes.
- Add oregano, thyme, salt, and pepper, then pour in diced tomatoes, white beans, and broth. Stir well.
- Bring to a boil, then reduce heat and let simmer for 15-20 minutes.
- Stir in kale or spinach and cook for another 2 minutes until wilted.
- Add lemon juice, adjust seasonings, and serve hot.

- Blend a portion of the soup for a creamier consistency.
- Add cooked chicken or turkey for extra protein.
