Ingredients

  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 large carrot, diced
  • 2 celery stalks, chopped
  • 1 small potato, diced
  • 2 cans (15 oz each) white beans, drained & rinsed
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (optional)
  • Salt & pepper to taste
  • 1 tbsp lemon juice

Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5 minutes.
  • Add garlic and cook for 30 seconds until fragrant.
  • Stir in potatoes, white beans, broth, thyme, oregano, red pepper flakes, salt, and pepper. Bring to a simmer.
  • Cover and cook for 15-20 minutes until potatoes are tender.
  • Blend part of the soup for a creamy texture while leaving some chunks.
  • Stir in lemon juice, adjust seasoning, and serve warm.

Notes

  • For extra creaminess, blend more soup or add coconut milk.
  • Add kale or spinach for extra nutrients.
  • Serve with crusty bread for the perfect meal.
