- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 large carrot, diced
- 2 celery stalks, chopped
- 1 small potato, diced
- 2 cans (15 oz each) white beans, drained & rinsed
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ tsp red pepper flakes (optional)
- Salt & pepper to taste
- 1 tbsp lemon juice
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in potatoes, white beans, broth, thyme, oregano, red pepper flakes, salt, and pepper. Bring to a simmer.
- Cover and cook for 15-20 minutes until potatoes are tender.
- Blend part of the soup for a creamy texture while leaving some chunks.
- Stir in lemon juice, adjust seasoning, and serve warm.

- For extra creaminess, blend more soup or add coconut milk.
- Add kale or spinach for extra nutrients.
