4 fresh mint leaves

Crushed ice
-
Splash of ginger ale
-
Club soda (to top)
Instructions
-
In a blender, combine chopped watermelon, lime juice, and 1 teaspoon sugar. Blend until smooth.
-
In each serving glass, muddle 2 mint leaves with ¼ teaspoon sugar to release oils.
-
Fill each glass halfway with the watermelon puree.
-
Add crushed ice and a splash of ginger ale.
-
Top with club soda and stir gently.
-
Garnish with a mint sprig or watermelon slice. Serve immediately.
Notes

-
Adjust sweetness to taste based on how ripe your watermelon is.
-
Strain watermelon puree for a smoother texture, if desired.
-
