- 1 tbsp olive oil
- Salt & pepper to taste
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 carrots, chopped
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 can (14 oz) diced tomatoes
- 1 cup tomato sauce
- 1 large potato, diced
- 1 cup green beans, chopped
- ½ cup corn kernels
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ tsp paprika
- 1 bay leaf
Instructions
- Brown the Beef: Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown it on all sides. Remove and set aside.
- Sauté Vegetables: In the same pot, add onion, garlic, carrots, and celery. Cook for 5 minutes until softened.
- Build the Soup Base: Pour in beef broth, diced tomatoes, and tomato sauce. Add potatoes, green beans, corn, thyme, oregano, paprika, and bay leaf.
- Simmer: Return beef to the pot. Bring to a gentle boil, then reduce heat and let it simmer for 1 to 1.5 hours, stirring occasionally.
- Final Touches: Adjust seasoning, remove the bay leaf, and serve hot.

- For extra depth, add a splash of Worcestershire sauce.
