  • 1 ½ lbs beef stew meat (bite-sized pieces)
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup tomato sauce
  • 1 large potato, diced
  • 1 cup green beans, chopped
  • ½ cup corn kernels
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp paprika
  • 1 bay leaf

Instructions

  • Brown the Beef: Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown it on all sides. Remove and set aside.
  • Sauté Vegetables: In the same pot, add onion, garlic, carrots, and celery. Cook for 5 minutes until softened.
  • Build the Soup Base: Pour in beef broth, diced tomatoes, and tomato sauce. Add potatoes, green beans, corn, thyme, oregano, paprika, and bay leaf.
  • Simmer: Return beef to the pot. Bring to a gentle boil, then reduce heat and let it simmer for 1 to 1.5 hours, stirring occasionally.
  • Final Touches: Adjust seasoning, remove the bay leaf, and serve hot.

Notes

  • For extra depth, add a splash of Worcestershire sauce.
  • Can be made in a slow cooker (LOW for 6-8 hours, HIGH for 3-4 hours).
