Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 teaspoons active dry yeast
  • ½ teaspoon salt
  • 1 cup warm milk (110°F)
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon pure vanilla extract
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  • In a small bowl, mix warm milk and sugar, then add yeast. Let sit until foamy.
  • In a large bowl, combine flour and salt. Add yeast mixture, melted butter, and vanilla extract. Stir until a dough forms.
  • Knead for 8-10 minutes until smooth and elastic.
  • Place dough in a greased bowl, cover, and let rise for 1.5 hours.
  • Roll out dough to ¼-inch thickness and cut into 2×2-inch squares.
  • Heat oil to 360°F and fry beignets in batches for 1-2 minutes per side until golden brown.
  • Drain on a paper towel-lined plate and dust with powdered sugar. Serve warm.

Notes

  • Ensure the milk is warm but not too hot to activate the yeast properly.
  • Let the dough rise fully to achieve light, fluffy beignets.
