Description
These grilled chicken skewers are juicy, zesty, and infused with Mediterranean flavors thanks to a lemon-yogurt marinade. Paired with creamy homemade tzatziki sauce, they make a healthy and satisfying meal for any day of the week.
Ingredients

For Chicken Skewers:

1½ lbs chicken breast, cut into strips

Zest and juice of 1 lemon

½ cup Greek yogurt

1 tsp garlic powder

1 tsp dried oregano
-
¼ tsp cayenne pepper (optional)

Salt & pepper, to taste

Fresh parsley, chopped (garnish)

For Tzatziki Sauce:

1 cup Greek yogurt
-
½ cucumber, grated and drained

1 tbsp olive oil
-
1 tbsp lemon juice
-
½ tsp garlic powder
-
1 tsp dried dill (or 1 tbsp fresh)

Salt & pepper, to taste

Instructions

Combine chicken with marinade ingredients in a bowl. Let sit for 30 minutes (or up to 8 hours).

Mix tzatziki ingredients in a bowl and chill.

Thread marinated chicken onto skewers.

Grill on medium-high heat, 4–5 minutes per side.

Garnish with parsley and serve with tzatziki.
Notes

Soak wooden skewers for 30 minutes to prevent burning.

Tzatziki can be made a day ahead.

Add grilled veggies to the skewers for more color and flavor.

Chicken can be baked at 400°F for 15–18 mins if no grill is available.
