  • For the Teriyaki Sauce:

    • ¼ cup low-sodium soy sauce
    • 2 tbsp honey or brown sugar
    • 1 tbsp rice vinegar
    • 1 tbsp cornstarch + 2 tbsp water (to thicken)
    • 1 tsp ginger, grated
    • 1 tsp sesame oil

Instructions

  • Cook the Beef: Heat olive oil in a pan over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if needed.
  • Sauté the Veggies: Stir in onion and garlic, cooking for 1-2 minutes until fragrant. Add carrots and broccoli, cooking for 3-4 minutes until tender-crisp.
  • Make the Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, sesame oil, and cornstarch slurry.
  • Combine Everything: Pour the sauce over the beef and veggies, stirring well. Let simmer for 2-3 minutes until thickened.
  • Serve: Serve hot over rice or a low-carb alternative. Garnish with sesame seeds and green onions if desired.
