  • 2 tbsp olive oil
  • 2 tbsp butter, melted
  • 2 tbsp brown sugar
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp cinnamon (optional)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, mix olive oil, melted butter, brown sugar, salt, black pepper, garlic powder, and cinnamon.
  • Toss the carrots in the mixture until evenly coated.
  • Arrange the carrots on the prepared baking sheet in a single layer.
  • Roast for 25-30 minutes, flipping halfway through, until fork-tender and caramelized.
  • Remove from the oven, sprinkle with fresh parsley, and serve warm.
