Description

A quick, colorful, and flavorful stir fry made with shrimp, juicy pineapple, and crunchy bell peppers in a sweet and spicy sauce. Perfect for weeknights!


Ingredients

  • 1 Tbsp vegetable oil

  • 1 small red onion, sliced

  • 2 tsp fresh ginger, minced

  • ½ red + ½ yellow bell pepper, sliced

  • ½ cup pineapple chunks

  • 68 medium shrimp, peeled and deveined

  • 1 Tbsp soy sauce

  • 1 Tbsp rice vinegar

  • ¾ tsp sriracha (optional)

  • Cilantro, scallions, mint, Fresno chile (for garnish)

  • Cooked rice, for serving


Instructions

  • Heat oil in a skillet.

  • Sauté onion and ginger for 1–2 minutes.

  • Add bell peppers and pineapple; cook 4–5 minutes.

  • Add shrimp; cook 2–3 minutes until pink and opaque.

  • Stir in soy sauce, vinegar, and sriracha. Simmer briefly.

  • Serve over rice with fresh herbs and lime wedges.

Notes

  • Use tamari for gluten-free.

  • Omit sriracha for a milder version.

  • Frozen shrimp works, just thaw and dry before cooking.
