For the Sugar Cookie Crust:

  • 1 package of sugar cookie dough (store-bought or homemade)

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract

For the Topping:

  • Whipped cream
  • Sprinkles or crushed cookies

Instructions

  • Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  • Press sugar cookie dough into the bottom of the pan and bake for 10 minutes. Let cool slightly.
  • In a bowl, beat cream cheese and sugar until smooth. Add eggs, sour cream, and vanilla, mixing until creamy.
  • Pour the cheesecake batter over the cookie crust and bake for 40-45 minutes until the center is slightly jiggly.
  • Let cool at room temperature, then refrigerate for at least 4 hours (preferably overnight).
  • Top with whipped cream and sprinkles before serving.
