Ingredients

  • For the Cupcakes: 1 box vanilla cake mix (plus ingredients listed on the box), ½ cup strawberry jam
  • For the Frosting: 1 cup butter (softened), 3 cups powdered sugar, 2 tbsp heavy cream, 1 tsp vanilla extract, ½ tsp strawberry extract (optional)
  • For the Crunch Topping: 1 cup Golden Oreos (crushed), ½ cup freeze-dried strawberries (crushed), 3 tbsp melted butter

Instructions

  • Prepare Cupcakes: Follow the box mix instructions and bake the cupcakes. Let them cool.
  • Make Crunch Topping: Mix crushed Golden Oreos, freeze-dried strawberries, and melted butter. Set aside.
  • Prepare Frosting: Beat butter until smooth. Add powdered sugar, cream, vanilla, and strawberry extract. Mix until fluffy.
  • Fill Cupcakes: Cut a small hole in each cupcake, fill with strawberry jam, and replace the cut-out piece.
  • Frost Cupcakes: Use a piping bag or a spatula to frost each cupcake.
  • Add Crunch Topping: Sprinkle or roll cupcakes in the strawberry crunch mixture, pressing lightly to stick.
