For the Cake:

- 2 tsp vanilla extract
- 1 tsp white vinegar
- 1 tbsp red food coloring
For the Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 3 ½ cups powdered sugar
- ½ cup fresh strawberries, finely chopped
- 1 tsp vanilla extract
For Garnish:
- ½ cup fresh strawberries, sliced
- White chocolate shavings (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch cake pans.
- Whisk flour, sugar, salt, baking soda, and cocoa powder in a bowl.
- In another bowl, mix oil, buttermilk, eggs, vanilla, vinegar, and red food coloring.
- Gradually combine wet and dry ingredients until just mixed.
- Divide batter evenly into cake pans and bake for 30–35 minutes.
- Let cakes cool in pans for 10 minutes, then transfer to a wire rack.
- Beat cream cheese and butter until smooth, then mix in powdered sugar, vanilla, and chopped strawberries.
- Frost the first cake layer, add the second, and cover the entire cake with frosting.
- Garnish with sliced strawberries and white chocolate shavings.
- Slice and serve!
Notes
- For a stronger strawberry flavor, mix 1 tbsp strawberry jam into the frosting.
- Use gel food coloring for a vibrant red hue without altering the texture.
- Chill cake for 30 minutes before slicing for cleaner cuts.
