  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee or hot water
For the Strawberry Filling:
  • 2 cups fresh strawberries, chopped
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
For the Chocolate Frosting:
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¾ cup cocoa powder
  • ½ cup heavy cream (or milk)
  • 2 teaspoons vanilla extract

Instructions

  • Bake the Cake: Preheat the oven to 350°F (175°C). Grease and line two 8-inch cake pans. Mix the dry ingredients, then add wet ingredients and hot coffee. Pour into pans and bake for 30-35 minutes. Let cool completely.
  • Prepare the Strawberry Filling: Cook chopped strawberries with sugar and lemon juice over medium heat. Add cornstarch mixture, stir until thickened, then cool.
  • Make the Frosting: Beat butter, add powdered sugar, cocoa powder, and vanilla. Mix in heavy cream until smooth.
  • Assemble the Cake: Layer the cake with strawberry filling, then frost the entire cake. Garnish with fresh strawberries.
