Description

A quick and easy dish featuring tender chicken coated in a sticky, sweet, and savory glaze, served over fluffy rice with fresh veggies. Perfect for a weeknight dinner or meal prep.


Ingredients

  • 2 boneless, skinless chicken breasts (cubed)
  • 2 cups cooked jasmine rice
  • 1 cup bell peppers, sliced
  • ½ cup shredded carrots
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 1 tbsp sesame seeds (optional)

For the Sauce:

  • ¼ cup soy sauce
  • 2 tbsp honey
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp cornstarch + 2 tbsp water (to thicken)

Instructions

  • Heat oil in a pan over medium-high heat. Cook chicken until golden brown, then remove.
  • In the same pan, sauté garlic. Add soy sauce, honey, brown sugar, rice vinegar, and red pepper flakes. Simmer for 2 minutes.
  • Mix cornstarch with water and stir into the sauce until thickened.
  • Return chicken to the pan and coat with the sauce. Cook for 1-2 minutes.
  • Serve over rice with bell peppers and carrots. Garnish with green onions and sesame seeds.

Notes

  • Swap chicken for tofu for a vegetarian option.
  • Adjust spice levels by adding or omitting red pepper flakes.
