- 2 boneless, skinless chicken breasts (cubed)
- 2 cups cooked jasmine rice
- 1 cup bell peppers, sliced
- ½ cup shredded carrots
- 3 cloves garlic, minced
- 2 green onions, chopped
- 1 tbsp sesame seeds (optional)
For the Sauce:
- ¼ cup soy sauce
- 2 tbsp honey
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- ½ tsp red pepper flakes (optional)
- 1 tbsp cornstarch + 2 tbsp water (to thicken)
Instructions
- Heat oil in a pan over medium-high heat. Cook chicken until golden brown, then remove.
- In the same pan, sauté garlic. Add soy sauce, honey, brown sugar, rice vinegar, and red pepper flakes. Simmer for 2 minutes.
- Mix cornstarch with water and stir into the sauce until thickened.
- Return chicken to the pan and coat with the sauce. Cook for 1-2 minutes.
- Serve over rice with bell peppers and carrots. Garnish with green onions and sesame seeds.

- Swap chicken for tofu for a vegetarian option.
