Description

These Spinach Feta Pinwheels are flaky, cheesy, and packed with delicious flavor. Perfect as an appetizer, snack, or brunch addition, they’re easy to make and loved by everyone.


Ingredients

  • 1 sheet puff pastry, thawed (from a 17.3 oz package)

  • 1 cup fresh spinach, chopped (or frozen, thawed, and drained)

  • 1/2 cup crumbled feta cheese

  • 1/2 cup shredded mozzarella cheese

  • 1 clove garlic, minced (optional)

  • Salt and pepper, to taste

  • 1 egg, beaten (for egg wash)


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • In a bowl, mix spinach, feta, mozzarella, garlic, salt, and pepper until well combined.

  • Unroll the puff pastry on a lightly floured surface and roll gently to smooth out creases.

  • Spread the spinach mixture evenly over the pastry, leaving a 1/2-inch border.

  • Roll the pastry tightly from one long side to the other, forming a log.

  • Slice the log into 1/2-inch thick rounds.

  • Arrange slices on the prepared baking sheet, brush with beaten egg.

  • Bake for 15–18 minutes or until golden brown and puffed.

  • Let cool slightly before serving.

Notes

  • To freeze unbaked pinwheels, slice and flash-freeze them before transferring to a freezer bag. Bake from frozen, adding 3–5 minutes to the baking time.

  • For extra flavor, try adding sun-dried tomatoes, olives, or roasted red peppers.
