These Spinach Feta Pinwheels are flaky, cheesy, and packed with delicious flavor. Perfect as an appetizer, snack, or brunch addition, they’re easy to make and loved by everyone.
Ingredients

1 sheet puff pastry, thawed (from a 17.3 oz package)

1 cup fresh spinach, chopped (or frozen, thawed, and drained)

1/2 cup crumbled feta cheese

1/2 cup shredded mozzarella cheese

1 clove garlic, minced (optional)

Salt and pepper, to taste

1 egg, beaten (for egg wash)
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a bowl, mix spinach, feta, mozzarella, garlic, salt, and pepper until well combined.

Unroll the puff pastry on a lightly floured surface and roll gently to smooth out creases.

Spread the spinach mixture evenly over the pastry, leaving a 1/2-inch border.

Roll the pastry tightly from one long side to the other, forming a log.

Slice the log into 1/2-inch thick rounds.

Arrange slices on the prepared baking sheet, brush with beaten egg.

Bake for 15–18 minutes or until golden brown and puffed.

Let cool slightly before serving.
Notes

To freeze unbaked pinwheels, slice and flash-freeze them before transferring to a freezer bag. Bake from frozen, adding 3–5 minutes to the baking time.

For extra flavor, try adding sun-dried tomatoes, olives, or roasted red peppers.
