Description

These Spicy Roasted Cauliflower Tacos are a vibrant, healthy, and flavorful meat-free meal packed with smoky, spicy goodness. Perfect for weeknight dinners or casual lunches, they’re easy to make, versatile, and absolutely delicious.

For the Cauliflower:

  • 1 large head of cauliflower, cut into bite-sized florets

  • 2 tbsp olive oil

  • 2 tsp chili powder

  • 1 tsp smoked paprika

  • 1/2 tsp garlic powder

  • Salt and pepper, to taste

For the Tacos:

  • 8 small tortillas (corn or flour)

  • 1 avocado, sliced

  • 1/2 cup corn (optional, but delicious!)

  • 1/4 cup red onion, finely chopped

  • 1/2 cup cherry tomatoes, halved

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)

For the Creamy Sauce:

  • 1/4 cup sour cream or Greek yogurt (or vegan sour cream)

  • 1 tbsp lime juice

  • 1/2 tsp chipotle powder or smoked paprika

  • 1 clove garlic, minced (optional)

  • Salt, to taste


Instructions

  • Preheat Oven: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  • Season Cauliflower: Toss cauliflower florets with olive oil, chili powder, smoked paprika, garlic powder, salt, and pepper.

  • Roast Cauliflower: Spread cauliflower on the baking sheet and roast for 25–30 minutes, flipping halfway through, until golden and crispy.

  • Prepare Sauce: Mix sour cream (or yogurt), lime juice, chipotle powder, garlic, and salt in a small bowl. Set aside.

  • Warm Tortillas: Heat tortillas in a skillet or microwave until soft.

  • Assemble Tacos: Fill tortillas with roasted cauliflower, avocado, corn, cherry tomatoes, and red onion. Drizzle with creamy sauce and garnish with fresh cilantro.

  • Serve & Enjoy: Serve with lime wedges for extra brightness. Enjoy immediately!
