Ingredients
For the Cauliflower:

For the Creamy Sauce:

1/4 cup sour cream or Greek yogurt (or vegan sour cream)

1 tbsp lime juice

1/2 tsp chipotle powder or smoked paprika

Instructions

Preheat Oven: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Season Cauliflower: Toss cauliflower florets with olive oil, chili powder, smoked paprika, garlic powder, salt, and pepper.

Roast Cauliflower: Spread cauliflower on the baking sheet and roast for 25–30 minutes, flipping halfway through, until golden and crispy.
