For the Spicy Potatoes:
- 3 large russet potatoes, diced
- 1 tsp garlic powder
- 1 tsp chili powder
- ½ tsp paprika
- ½ tsp cumin
- 2 tbsp olive oil
- Salt & pepper to taste
For the Zesty Sauce:
- ½ cup mayonnaise (or plant-based alternative)
- 1 tbsp hot sauce (adjust to taste)
- 1 tbsp lime juice
- ½ tsp garlic powder
- Pinch of salt
For Assembling the Tacos:
- 6 small flour tortillas
- 1 cup shredded lettuce
- ½ cup shredded cheese (cheddar or Mexican blend)
- ½ cup diced tomatoes (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Toss diced potatoes with olive oil, garlic powder, chili powder, paprika, cumin, salt, and pepper.
- Spread them on a baking sheet and roast for 25-30 minutes, flipping halfway through.
- In a bowl, mix mayonnaise, hot sauce, lime juice, garlic powder, and salt to make the zesty sauce.
- Warm tortillas in a dry pan or microwave for 10-15 seconds.
- Fill each tortilla with crispy potatoes, lettuce, cheese, and tomatoes.
- Drizzle with zesty sauce and serve immediately.
Notes
- For extra crispiness, soak potatoes in cold water for 30 minutes before roasting.
- Adjust spice levels by adding more or less chili powder.
- Store leftover potatoes in an airtight container and reheat in the oven for best results.
