Description

This Spanish-Style Potato Soup is a hearty, smoky, and flavorful dish made with tender potatoes, onions, garlic, smoked paprika, and a rich broth. It’s an easy one-pot meal that’s perfect for cozy dinners and pairs beautifully with crusty bread.


Ingredients

  • 1 ½ lbs potatoes (peeled & diced)
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth (or vegetable broth)
  • ½ cup heavy cream (optional)
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onions and garlic until soft and fragrant.
  • Stir in smoked paprika, cumin, and diced tomatoes. Cook for 2 minutes.
  • Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  • Stir in heavy cream (if using) and season with salt & pepper. Simmer for 5 more minutes.
  • Serve hot, garnished with fresh parsley.

Notes

  • Blend part of the soup for a creamier texture while keeping some potato chunks intact.
  • Add chorizo or beans for extra protein.
