- 1 ½ lbs potatoes (peeled & diced)
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 1 tsp smoked paprika
- ½ tsp cumin
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth (or vegetable broth)
- ½ cup heavy cream (optional)
- Salt & pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions and garlic until soft and fragrant.
- Stir in smoked paprika, cumin, and diced tomatoes. Cook for 2 minutes.
- Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Stir in heavy cream (if using) and season with salt & pepper. Simmer for 5 more minutes.
- Serve hot, garnished with fresh parsley.
Notes
- Blend part of the soup for a creamier texture while keeping some potato chunks intact.
- Add chorizo or beans for extra protein.
