Description

A rich, creamy, and flavorful spaghetti dish featuring a sun-dried tomato cream sauce, fresh spinach, and Parmesan cheese. Perfect for a quick and easy dinner!


Ingredients

  • 12 oz spaghetti
  • 3 cloves garlic, minced
  • ½ small onion, diced
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Juice of ½ lemon (optional)
  • Salt & pepper, to taste
  • Fresh basil or parsley for garnish

Instructions

  • Cook spaghetti according to package instructions. Reserve ½ cup pasta water, then drain.
  • Heat olive oil and butter in a skillet. Sauté onion and garlic until fragrant.
  • Stir in sun-dried tomatoes and cook for 1 minute.
  • Pour in heavy cream, add Parmesan cheese, and season with salt and pepper. Simmer until thickened.
  • Add spinach and stir until wilted.
  • Toss in cooked spaghetti, adding reserved pasta water if needed.
  • Garnish with fresh basil and extra Parmesan. Serve warm and enjoy!

  • Add grilled chicken or shrimp for extra protein.
  • Substitute heavy cream with coconut milk for a dairy-free option.
