- 12 oz spaghetti
- 3 cloves garlic, minced
- ½ small onion, diced
- 1 cup heavy cream
- ½ cup sun-dried tomatoes, chopped
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach
- 2 tbsp butter
- 1 tbsp olive oil
- Juice of ½ lemon (optional)
- Salt & pepper, to taste
- Fresh basil or parsley for garnish
Instructions
- Cook spaghetti according to package instructions. Reserve ½ cup pasta water, then drain.
- Heat olive oil and butter in a skillet. Sauté onion and garlic until fragrant.
- Stir in sun-dried tomatoes and cook for 1 minute.
- Pour in heavy cream, add Parmesan cheese, and season with salt and pepper. Simmer until thickened.
- Add spinach and stir until wilted.
- Toss in cooked spaghetti, adding reserved pasta water if needed.
- Garnish with fresh basil and extra Parmesan. Serve warm and enjoy!
