Ingredients

  • ½ cup (115g) unsalted butter, softened

  • ½ cup (120g) creamy peanut butter (natural or processed)

  • ½ cup (100g) granulated sugar

  • ½ cup (110g) brown sugar, packed

  • 1 large egg

  • 1 tsp vanilla extract

  • 1¼ cups (160g) all-purpose flour

  • ½ tsp baking soda

  • ½ tsp baking powder

  • ¼ tsp salt

  • Optional: ½ cup (75g) chopped peanuts or peanut butter chips


Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  • Cream butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.

  • Add egg and vanilla; beat until combined.

  • In a separate bowl, whisk flour, baking soda, baking powder, and salt.

  • Gradually mix dry ingredients into wet ingredients until just combined.

  • Fold in optional mix-ins if using.

  • Scoop ~2 tbsp dough, roll into balls, and place on baking sheet.

  • Flatten with a fork in a crisscross pattern.

  • Bake for 10–12 minutes or until edges are golden and centers are soft.

  • Cool for 5 minutes on the baking sheet, then transfer to a wire rack.

Notes

  • Use natural peanut butter for a richer flavor.

  • Chill dough for 30 minutes for thicker cookies.

  • Sprinkle sea salt on top for added flavor contrast.
