These S’mores Cookie Bars capture the classic campfire treat in a simple, no-fire-required dessert. With layers of buttery graham cracker dough, melted chocolate, and toasted marshmallows, these bars are easy to make and perfect for any occasion.


Ingredients

  • ½ cup unsalted butter, softened
  • ¼ cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups all-purpose flour
  • ¾ cup graham cracker crumbs (about 6 full sheets, crushed)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ¼ cups chocolate chips or chopped chocolate bars
  • 1 ½ cups mini marshmallows

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  • In a bowl, cream butter, brown sugar, and granulated sugar until fluffy.
  • Mix in egg and vanilla extract until combined.
  • In another bowl, whisk together flour, graham cracker crumbs, baking powder, and salt.
  • Gradually add dry ingredients to wet ingredients and stir until combined.
  • Press half the cookie dough into the prepared baking dish.
  • Sprinkle chocolate chips evenly over the dough.
  • Add a layer of mini marshmallows on top.
  • Crumble and drop the remaining cookie dough over the marshmallows.
  • Bake for 20-25 minutes or until golden brown and marshmallows are toasted.
  • Let cool completely before slicing.

Notes

  • For extra gooey bars, microwave for 10 seconds before serving.
  • Substitute dark chocolate for a richer taste.
