These S’mores Cookie Bars capture the classic campfire treat in a simple, no-fire-required dessert. With layers of buttery graham cracker dough, melted chocolate, and toasted marshmallows, these bars are easy to make and perfect for any occasion.

- ½ cup unsalted butter, softened
- ¼ cup brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ⅓ cups all-purpose flour
- ¾ cup graham cracker crumbs (about 6 full sheets, crushed)
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 ¼ cups chocolate chips or chopped chocolate bars
- 1 ½ cups mini marshmallows
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a bowl, cream butter, brown sugar, and granulated sugar until fluffy.
- Mix in egg and vanilla extract until combined.
- In another bowl, whisk together flour, graham cracker crumbs, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients and stir until combined.
- Press half the cookie dough into the prepared baking dish.
- Sprinkle chocolate chips evenly over the dough.
- Add a layer of mini marshmallows on top.
- Crumble and drop the remaining cookie dough over the marshmallows.
- Bake for 20-25 minutes or until golden brown and marshmallows are toasted.
- Let cool completely before slicing.
Notes
- For extra gooey bars, microwave for 10 seconds before serving.
- Substitute dark chocolate for a richer taste.
- Add a sprinkle of sea salt for a sweet-salty flavor.
