  • 1 ½ lbs beef stew meat (cut into bite-sized pieces)
  • 1 lb baby potatoes (halved)
  • 3 cloves garlic (minced)
  • 4 tbsp unsalted butter (melted)
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ¼ cup beef broth
  • 1 tbsp olive oil

Instructions

  • Season beef with salt, black pepper, smoked paprika, and onion powder.
  • Heat olive oil in a skillet over medium-high heat and sear the beef on all sides.
  • Place potatoes at the bottom of the slow cooker, followed by the beef.
  • In a small bowl, mix melted butter, garlic, thyme, rosemary, and beef broth. Pour over the beef and potatoes.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the beef is tender.
  • Garnish with fresh parsley and serve hot.
