- 1 ½ lbs boneless, skinless chicken thighs (or breasts), cut into chunks
- 3 cups chicken broth
- 3 carrots, chopped
- 2 celery stalks, chopped
- 3 medium potatoes, diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup frozen peas (added at the end)
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ tsp paprika
- Salt & pepper to taste
- 1 bay leaf
- For Thickening (Optional):
- 2 tbsp cornstarch + 3 tbsp water (to make a slurry)
Instructions
- Prepare Ingredients – Chop vegetables and cut chicken into bite-sized pieces.
- Load the Slow Cooker – Add chicken, carrots, celery, potatoes, onion, and garlic to the slow cooker. Pour in chicken broth, then add thyme, oregano, paprika, salt, pepper, and bay leaf. Stir to combine.
- Cook – Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is tender.
- Thicken the Stew (Optional) – If you prefer a thicker consistency, mix cornstarch with water and stir into the stew. Let cook for an additional 30 minutes.
- Final Touches – Add frozen peas during the last 10 minutes. Remove the bay leaf before serving.
Notes
- Swap potatoes for sweet potatoes for a different flavor.
- Stir in a splash of lemon juice for brightness before serving.
- For extra creaminess, add ½ cup of heavy cream or coconut milk.
- Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
