Ingredients

  • 1 ½ lbs boneless, skinless chicken thighs (or breasts), cut into chunks
  • 3 cups chicken broth
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen peas (added at the end)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt & pepper to taste
  • 1 bay leaf
  • For Thickening (Optional):
    • 2 tbsp cornstarch + 3 tbsp water (to make a slurry)

Instructions

  • Prepare Ingredients – Chop vegetables and cut chicken into bite-sized pieces.
  • Load the Slow Cooker – Add chicken, carrots, celery, potatoes, onion, and garlic to the slow cooker. Pour in chicken broth, then add thyme, oregano, paprika, salt, pepper, and bay leaf. Stir to combine.
  • Cook – Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is tender.
  • Thicken the Stew (Optional) – If you prefer a thicker consistency, mix cornstarch with water and stir into the stew. Let cook for an additional 30 minutes.
  • Final Touches – Add frozen peas during the last 10 minutes. Remove the bay leaf before serving.

Notes

  • Swap potatoes for sweet potatoes for a different flavor.
  • Stir in a splash of lemon juice for brightness before serving.
  • For extra creaminess, add ½ cup of heavy cream or coconut milk.
  • Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
