- 1 ½ lbs beef chuck roast, thinly sliced
- 1 cup beef broth
- ½ cup low-sodium soy sauce
- ⅓ cup dark brown sugar
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 2 tbsp cornstarch
- 3 cups frozen broccoli florets
- 1 tsp grated fresh ginger (optional)
- 1 tbsp oyster sauce (optional)
- ½ tsp red pepper flakes (optional)
Instructions
- Slice beef thinly against the grain.
- In a bowl, whisk together beef broth, soy sauce, brown sugar, sesame oil, and minced garlic.
- Add beef to the slow cooker and pour the sauce over it. Stir to coat.
- Cover and cook on LOW for 5-6 hours or HIGH for 3 hours.
- Mix ¼ cup of sauce with 2 tbsp cornstarch, then stir it back into the slow cooker.
- Add broccoli and cook for another 30 minutes.
- Serve over steamed rice or noodles.
Notes
- Use low-sodium soy sauce to control saltiness.
- Fresh broccoli can be used instead of frozen; steam it separately and stir it in at the end.
- For extra flavor, add grated ginger and a splash of hoisin sauce.
