  • 1 ½ lbs beef chuck roast, thinly sliced
  • 1 cup beef broth
  • ½ cup low-sodium soy sauce
  • ⅓ cup dark brown sugar
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 2 tbsp cornstarch
  • 3 cups frozen broccoli florets
  • 1 tsp grated fresh ginger (optional)
  • 1 tbsp oyster sauce (optional)
  • ½ tsp red pepper flakes (optional)

Instructions

  • Slice beef thinly against the grain.
  • In a bowl, whisk together beef broth, soy sauce, brown sugar, sesame oil, and minced garlic.
  • Add beef to the slow cooker and pour the sauce over it. Stir to coat.
  • Cover and cook on LOW for 5-6 hours or HIGH for 3 hours.
  • Mix ¼ cup of sauce with 2 tbsp cornstarch, then stir it back into the slow cooker.
  • Add broccoli and cook for another 30 minutes.
  • Serve over steamed rice or noodles.

Notes

  • Use low-sodium soy sauce to control saltiness.
  • Fresh broccoli can be used instead of frozen; steam it separately and stir it in at the end.
  • For extra flavor, add grated ginger and a splash of hoisin sauce.
