Description

Scalloped Corn is a creamy, cheesy baked side dish with sweet corn, eggs, milk, and a crunchy buttery cracker topping. Perfect for holidays and family dinners!


Ingredients

  • 2 cans (15 oz each) corn, drained (or 2 cups frozen corn, thawed)
  • 1 cup milk or heavy cream
  • ½ cup shredded cheddar cheese
  • 2 eggs, beaten
  • 1 cup crushed buttery crackers or breadcrumbs
  • ¼ cup butter, melted
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat & Prep: Preheat oven to 350°F (175°C) and grease a baking dish.
  • Mix Ingredients: In a large bowl, whisk milk, eggs, garlic powder, salt, and pepper. Stir in corn and cheese.
  • Assemble: Pour the mixture into the baking dish. Top with crushed crackers and drizzle with melted butter.
  • Bake: Bake for 30-35 minutes until golden brown and set.
  • Serve: Garnish with parsley and serve warm.

Notes

  • Use fresh corn for extra flavor.
  • Swap cheddar for Parmesan or Pepper Jack.
