  • 1 lb Italian chicken or beef sausage, browned and crumbled

  • 1 small onion, diced

  • 4 cloves garlic, minced

  • 4 cups chicken broth

  • 1 can (14.5 oz) diced tomatoes (with juice)

  • 2 cups fresh spinach, chopped (or kale if preferred)

  • 1 cup heavy cream (or coconut milk for dairy-free option)

  • 1 package (9 oz) cheese tortellini (fresh or frozen)

  • Salt and pepper, to taste

  • Fresh parsley or basil, chopped (for garnish, optional)


Instructions

  • Brown the Sausage: In a skillet over medium heat, cook and crumble the sausage until browned. Drain excess grease.

  • Load the Slow Cooker: Add browned sausage, onions, garlic, chicken broth, diced tomatoes, salt, and pepper to the slow cooker. Stir well to combine.

  • Cook: Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours.

  • Add Tortellini & Cream: About 30 minutes before serving, stir in the tortellini, heavy cream, and spinach. Continue cooking on HIGH until the tortellini is tender and spinach is wilted.

  • Serve & Enjoy: Ladle the soup into bowls, garnish with fresh parsley or basil, and serve hot.

Notes

  • For dairy-free, use coconut milk instead of heavy cream.
