Description

This cozy sausage and potato breakfast bake is a warm, cheesy, and filling dish that’s perfect for brunch, holidays, or meal prepping. It’s packed with seasoned sausage, fluffy eggs, shredded potatoes, melty cheese, and kale. Customizable and easy to make ahead!


Ingredients

  • 12 oz ground sausage

  • 68 large eggs

  • 1/2 cup milk

  • 1 1/2 tsp Herbes de Provence

  • Salt and pepper, to taste

  • 1 lb raw shredded potatoes (or refrigerated hash browns)

  • 1 cup shredded cheese (Gruyère recommended)

  • 2 cups shredded kale (optional)


Instructions

  • Preheat oven to 350°F (175°C) and line a pie pan with parchment paper.

  • Brown the sausage in a skillet until fully cooked. Let it cool slightly.

  • In a large bowl, whisk eggs, milk, Herbes de Provence, salt, and pepper.

  • Stir in shredded potatoes, 2/3 cup cheese, kale, and sausage. Mix well.

  • Transfer mixture to prepared dish and top with remaining cheese.

  • Cover loosely with foil and bake for 30 minutes, until mostly set.

  • Remove foil, raise oven temp to 400–450°F, and bake 10–15 more minutes until golden.

  • Let rest 10 minutes before slicing and serving.

Notes

  • Kale can be swapped with spinach or left out.

  • Use turkey sausage for a lighter version.

  • Pre-shredded hash browns save time.

  • Can be made ahead and reheated.
