Description

This Roasted Moroccan-Spiced Cauliflower with Tahini-Honey Drizzle is a deliciously bold and healthy dish featuring crispy, golden-brown cauliflower coated in warm Moroccan spices. Topped with a creamy, slightly sweet tahini-honey drizzle, it’s perfect as a side dish, appetizer, or even a hearty salad addition.

or the Roasted Cauliflower:

  • 1 large head of cauliflower, cut into florets

  • 3 tablespoons olive oil

  • 2 teaspoons Moroccan spice blend (or Ras el Hanout)

  • Salt and pepper, to taste

For the Tahini-Honey Drizzle:

  • 2 tablespoons tahini (sesame paste)

  • 2 tablespoons honey (or maple syrup for a vegan option)

  • 12 tablespoons warm water (to thin the sauce)

For Garnish (Optional):

  • Fresh parsley or cilantro, chopped


Instructions

  • Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

  • Prepare Cauliflower: Wash and cut the cauliflower into florets. Pat dry and place in a large mixing bowl.

  • Season Cauliflower: Add olive oil, Moroccan spice blend, salt, and pepper. Toss well to coat evenly.

  • Roast: Spread cauliflower on the baking sheet in a single layer. Roast for 25-30 minutes, flipping halfway through, until golden brown and tender.

  • Make Sauce: In a small bowl, whisk together tahini, honey, and warm water until smooth and pourable.

  • Drizzle & Serve: Drizzle the tahini-honey sauce over the roasted cauliflower. Garnish with parsley or cilantro if desired. Serve warm and enjoy!

Notes

  • For a vegan option, use maple syrup instead of honey.

  • Store leftovers in an airtight container in the fridge for up to 4 days.

  • To enhance the flavor, try toasting your spices briefly in a skillet before adding them to the cauliflower.
