Ingredients

6–8 chicken drumsticks

3 cups cherry tomatoes, halved

1 red onion, cut into wedges

3 garlic cloves

3 tablespoons olive oil, divided

1 teaspoon smoked paprika

Salt and black pepper, to taste
Instructions

Preheat oven to 400°F (200°C).

Lightly grease a 9×13-inch baking dish.

Add cherry tomatoes, onion, and garlic to the dish. Drizzle with half the olive oil and toss.

Pat chicken dry and season with paprika, salt, and pepper. Place over the vegetables.

Drizzle remaining oil over chicken.

Roast for 35–40 minutes or until chicken reaches 165°F internally and skin is crispy.
