Red Velvet Cake Pops are bite-sized treats made with moist red velvet cake and cream cheese frosting, dipped in chocolate for a smooth, delicious coating. These pops are perfect for parties, celebrations, and gifting.

For the Cake:
- 1 ¼ cups all-purpose flour
- 2 tbsp cocoa powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ cup buttermilk
- 1 tbsp red food coloring
- 1 tsp white vinegar

For the Cake Pops:
- ½ cup cream cheese frosting
- 2 cups chocolate or candy melts (white, milk, or dark)
- 24 cake pop sticks
- Sprinkles or decorations (optional)
Instructions
- Bake the Cake: Preheat the oven to 350°F (175°C). Mix dry ingredients in one bowl and wet ingredients in another. Combine, pour into a greased pan, and bake for 30 minutes. Cool completely.
- Crumble and Mix: Crumble the cooled cake and mix with cream cheese frosting until the mixture holds together.
- Shape the Pops: Roll into 1-inch balls, place on a lined baking sheet, and freeze for 15-20 minutes.
- Dip in Chocolate: Melt chocolate, dip each stick in melted chocolate, insert into cake balls, then fully coat the cake pops. Let excess chocolate drip off.
- Decorate & Set: Add sprinkles while the coating is wet and let them set at room temperature or in the fridge before serving.
Notes
- Chill cake pops before dipping for better results.
- Thin out chocolate with vegetable or coconut oil for a smoother coating.
