Description

A luscious and fruity twist on the traditional Italian dessert, this Raspberry Tiramisu combines creamy mascarpone, tangy raspberry sauce, and delicate ladyfingers for a refreshing, irresistible treat.

Raspberry Sauce:

  • 2 cups fresh or frozen raspberries
  • 1/4 cup sugar
  • 2 tablespoons water
  • 1 tablespoon lemon juice

Mascarpone Cream Layer:

  • 1 1/2 cups mascarpone cheese (room temperature)
  • 1 cup heavy whipping cream (chilled)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Assembly:

  • 1 pack ladyfingers (about 24 pieces)
  • 1/2 cup raspberry juice or berry-flavored fruit juice (for dipping)
  • Fresh raspberries and mint leaves (for garnish)

Instructions

  • Prepare Raspberry Sauce: Cook raspberries, sugar, water, and lemon juice over medium heat. Strain if desired. Let cool.
  • Make Mascarpone Cream: Beat mascarpone, powdered sugar, and vanilla. Fold in whipped heavy cream until smooth.
  • Assemble: Layer dipped ladyfingers, mascarpone cream, and raspberry sauce. Repeat layers.
  • Chill & Serve: Refrigerate for at least 4 hours or overnight. Garnish with raspberries and mint before serving.

Notes

For best results, chill overnight. Use fresh raspberries for garnish if possible.
