Raspberry Sauce:
- 2 cups fresh or frozen raspberries
- 1/4 cup sugar
- 2 tablespoons water
- 1 tablespoon lemon juice
Mascarpone Cream Layer:
- 1 1/2 cups mascarpone cheese (room temperature)
- 1 cup heavy whipping cream (chilled)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Assembly:
- 1 pack ladyfingers (about 24 pieces)
- 1/2 cup raspberry juice or berry-flavored fruit juice (for dipping)
- Fresh raspberries and mint leaves (for garnish)
Instructions
- Prepare Raspberry Sauce: Cook raspberries, sugar, water, and lemon juice over medium heat. Strain if desired. Let cool.
- Make Mascarpone Cream: Beat mascarpone, powdered sugar, and vanilla. Fold in whipped heavy cream until smooth.
- Assemble: Layer dipped ladyfingers, mascarpone cream, and raspberry sauce. Repeat layers.
- Chill & Serve: Refrigerate for at least 4 hours or overnight. Garnish with raspberries and mint before serving.
Notes
For best results, chill overnight. Use fresh raspberries for garnish if possible.
