Danish Pastry:

  • 1 package (2 sheets) Puff pastry, thawed

  • 1 large egg, beaten (for egg wash)

Cream Cheese Filling:

  • 8 oz Cream cheese, softened

  • 1/3 cup Granulated sugar

  • 1 tsp Vanilla extract

  • 1 tbsp Lemon juice (optional, for extra tang)

Raspberry Filling:

  • 1/2 cup Raspberry jam (or fresh raspberries if preferred)

Topping:

  • Powdered sugar (for dusting)

  • Fresh raspberries and mint leaves (optional, for decoration)


Instructions

  • Prepare the Pastry:

    • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

    • Roll out puff pastry sheets on a floured surface and cut each sheet into 4 squares (8 total).

  • Make the Cream Cheese Filling:

    • In a bowl, beat cream cheese, sugar, vanilla extract, and lemon juice until smooth.

  • Assemble the Danishes:

    • Place a dollop of cream cheese filling in the center of each pastry square.

    • Add 1 tbsp raspberry jam on top of the cream cheese.

    • Fold the edges slightly inward to form a border.

    • Brush pastry edges with beaten egg.

  • Bake & Cool:

    • Bake for 15–18 minutes until golden brown and puffed.

    • Allow to cool for 5 minutes before transferring to a wire rack.

  • Decorate & Serve:

    • Dust with powdered sugar and garnish with fresh raspberries and mint leaves if desired. Serve warm or at room temperature.

  • For a crispier texture, bake danishes on a wire rack over the baking sheet.
