Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Cream butter and sugar until light and fluffy (about 2-3 minutes).

  • Add egg yolk and vanilla extract; mix until well combined.

  • Gradually add flour and salt, mixing until a dough forms.

  • Roll tablespoon-sized portions of dough into balls and place them on the baking sheet, about 2 inches apart.

  • Press the center of each ball to form an indentation.

  • In a bowl, mix chopped pecans, brown sugar, corn syrup, melted butter, vanilla, and salt.

  • Spoon about a teaspoon of pecan filling into each indentation.

  • Bake for 12-15 minutes or until edges are golden brown.

  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
