    • 4 cups shredded cabbage (green & purple)
    • 1 cup shredded carrots
    • ½ red bell pepper, thinly sliced
    • ½ cup cucumber, sliced
    • ¼ cup chopped peanuts
    • 2 green onions, chopped
  • For the Peanut Dressing:

    • ¼ cup peanut butter
    • 2 tbsp soy sauce
    • 1 tbsp honey or maple syrup
    • 1 tbsp rice vinegar or lime juice
    • ½ tsp sriracha (optional)
    • 2 tbsp water (to thin as needed)

Instructions

  • Make the Dressing: Whisk together peanut butter, soy sauce, honey, rice vinegar, sriracha, and water until smooth. Adjust consistency if needed.
  • Prepare the Salad: In a large bowl, combine shredded chicken, cabbage, carrots, bell pepper, and cucumber.
  • Toss with Dressing: Pour the peanut dressing over the salad and mix well.
  • Garnish & Serve: Top with chopped peanuts and green onions. Serve fresh and enjoy!
