- ½ red bell pepper, thinly sliced
- ½ cup cucumber, sliced
- ¼ cup chopped peanuts
- 2 green onions, chopped

For the Peanut Dressing:
- ¼ cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar or lime juice
- ½ tsp sriracha (optional)
- 2 tbsp water (to thin as needed)
Instructions
- Make the Dressing: Whisk together peanut butter, soy sauce, honey, rice vinegar, sriracha, and water until smooth. Adjust consistency if needed.
- Prepare the Salad: In a large bowl, combine shredded chicken, cabbage, carrots, bell pepper, and cucumber.
- Toss with Dressing: Pour the peanut dressing over the salad and mix well.
- Garnish & Serve: Top with chopped peanuts and green onions. Serve fresh and enjoy!
