Description

Tender, juicy chicken thighs baked to perfection with a smoky dry rub and layers of sticky-sweet BBQ sauce. An easy, flavor-packed dinner ready in under an hour of active time. Perfect for busy weeknights or meal prepping.


Ingredients

  • 2 lbs boneless skinless chicken thighs

  • 2 tbsp avocado oil

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • ½ tsp dried mustard

  • 1 cup BBQ sauce (plus extra for serving)


Instructions

  • In a large bowl, combine chicken, avocado oil, and spices. Toss to coat evenly. Cover and marinate in the fridge for at least 1 hour or overnight.

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil.

  • Toss chicken with ¼ cup BBQ sauce. Arrange in a single layer on baking sheet.

  • Bake for 15 minutes.

  • Flip chicken, brush with more BBQ sauce, and bake another 10 minutes.

  • Flip again, brush with more sauce, and broil for 5–6 minutes until caramelized and slightly crispy on the edges.

  • Let rest 5 minutes before serving with extra BBQ sauce.

Notes

  • For best flavor, marinate the chicken overnight.

  • Adjust broil time based on how thick your BBQ sauce is—thicker sauces caramelize faster.

  • Use a wire rack on your baking sheet for crispier results.

  • Leftovers are great for sandwiches, salads, or tacos.
