Ingredients
-
2 lbs boneless skinless chicken thighs
-
2 tbsp avocado oil
-
1 tsp kosher salt
-
½ tsp black pepper
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp smoked paprika
-
½ tsp dried mustard
-
1 cup BBQ sauce (plus extra for serving)
Instructions
-
In a large bowl, combine chicken, avocado oil, and spices. Toss to coat evenly. Cover and marinate in the fridge for at least 1 hour or overnight.
-
Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil.
-
Toss chicken with ¼ cup BBQ sauce. Arrange in a single layer on baking sheet.
-
Bake for 15 minutes.
-
Flip chicken, brush with more BBQ sauce, and bake another 10 minutes.
-
Flip again, brush with more sauce, and broil for 5–6 minutes until caramelized and slightly crispy on the edges.
-
Let rest 5 minutes before serving with extra BBQ sauce.
Notes
-
For best flavor, marinate the chicken overnight.
-
Adjust broil time based on how thick your BBQ sauce is—thicker sauces caramelize faster.
-
Use a wire rack on your baking sheet for crispier results.
-
Leftovers are great for sandwiches, salads, or tacos.
