Description

This Lemon Chicken Orzo Soup is a light yet comforting dish made with shredded chicken, tender orzo pasta, fresh vegetables, and a bright lemony broth. Perfect for a quick and healthy meal, this soup comes together in one pot in just 30 minutes!

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • ¾ cup orzo pasta
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt & pepper, to taste
  • Juice of 1 large lemon
  • 1 cup fresh spinach (optional)

Instructions

  • Heat olive oil in a large pot over medium heat. Sauté the onion, carrots, and celery for 5 minutes. Add garlic and cook for 30 seconds.
  • Pour in the chicken broth, then add shredded chicken, oregano, thyme, salt, and pepper. Simmer for 10 minutes.
  • Stir in orzo pasta and cook for 8-10 minutes until tender.
  • Add fresh lemon juice and spinach, then simmer for 2 more minutes.
  • Taste and adjust seasoning. Serve warm with lemon slices and fresh parsley.

  • For a gluten-free option, swap orzo with rice or quinoa.
  • Add a splash of heavy cream for a richer, creamier soup.
