- 1 tbsp olive oil
- 1 small onion, diced
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- ¾ cup orzo pasta
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt & pepper, to taste
- Juice of 1 large lemon
- 1 cup fresh spinach (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Sauté the onion, carrots, and celery for 5 minutes. Add garlic and cook for 30 seconds.
- Pour in the chicken broth, then add shredded chicken, oregano, thyme, salt, and pepper. Simmer for 10 minutes.
- Stir in orzo pasta and cook for 8-10 minutes until tender.
- Add fresh lemon juice and spinach, then simmer for 2 more minutes.
- Taste and adjust seasoning. Serve warm with lemon slices and fresh parsley.
