- 1 tablespoon olive oil
- 1 cup diced yellow onion
- 1 pound ground beef (or turkey)
- 3 teaspoons taco seasoning
- 20 ounces enchilada sauce
- 2 cups beef broth
- 8 ounces dry rotini pasta
- 1 ½ cups shredded cheese (Cheddar or Monterey Jack)
- 1 cup corn (optional)
- 2 ounces cream cheese (optional)
- Fresh cilantro and green onions for garnish
Instructions:
- Heat olive oil in a large pot over medium heat. Add diced onions and sauté for 2 minutes.
- Add ground beef and cook until browned. Drain excess fat if needed.
- Stir in taco seasoning, enchilada sauce, and beef broth.
- Add pasta and bring to a boil. Reduce heat and simmer for 15-20 minutes, stirring occasionally.
- Once the pasta is cooked, stir in shredded cheese and optional cream cheese.
- Garnish with cilantro and green onions. Serve warm.
