  • 2 ½ cups granulated sugar
  • ½ cup light corn syrup
  • ½ cup water
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or walnuts (optional)

Instructions

  • Prepare Baking Sheet: Line a baking sheet with parchment paper.
  • Make Sugar Syrup: In a saucepan, combine sugar, corn syrup, water, and salt. Stir over medium heat until sugar dissolves.
  • Heat Syrup to 260°F: Attach a candy thermometer and cook without stirring until it reaches the hard-ball stage.
  • Beat Egg Whites: In a stand mixer, beat egg whites until stiff peaks form.
  • Combine: Slowly pour the hot syrup into the egg whites while mixing on high. Beat until thick and holds its shape.
  • Add Vanilla & Nuts: Stir in vanilla and nuts (if using).
  • Shape Candy: Quickly drop spoonfuls onto the prepared baking sheet.
  • Set & Serve: Let the candy set at room temperature for 2 hours before serving.
