- 2 large egg whites (room temperature)
- 2 ½ cups granulated sugar
- ½ cup light corn syrup
- ½ cup water
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup chopped pecans or walnuts (optional)
Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper.
- Make Sugar Syrup: In a saucepan, combine sugar, corn syrup, water, and salt. Stir over medium heat until sugar dissolves.
- Heat Syrup to 260°F: Attach a candy thermometer and cook without stirring until it reaches the hard-ball stage.
- Beat Egg Whites: In a stand mixer, beat egg whites until stiff peaks form.
- Combine: Slowly pour the hot syrup into the egg whites while mixing on high. Beat until thick and holds its shape.
- Add Vanilla & Nuts: Stir in vanilla and nuts (if using).
- Shape Candy: Quickly drop spoonfuls onto the prepared baking sheet.
- Set & Serve: Let the candy set at room temperature for 2 hours before serving.

- Avoid making divinity on humid days, as moisture affects the texture.
