Description

These Norwegian Raspberry Custard Buns combine soft, cardamom-infused dough with creamy vanilla custard and juicy raspberries. Baked to perfection, they are lightly golden, slightly sweet, and irresistibly fluffy. Perfect for breakfast, brunch, or an afternoon treat!


Ingredients

  • For the Dough: Whole milk, all-purpose flour, sugar, instant yeast, ground cardamom, salt, eggs, butter
  • For the Filling: Butter, brown sugar, frozen raspberries
  • For the Custard: Egg yolks, sugar, cornstarch, whole milk, vanilla bean or extract

Instructions

  • Prepare the dough by combining lukewarm milk, flour, yeast, sugar, cardamom, and eggs. Knead until smooth. Let rise.
  • Prepare the filling by mixing butter and brown sugar.
  • Roll the dough, spread the filling, and sprinkle raspberries. Roll into a log and cut into buns. Let rise.
  • Make the custard by heating milk and vanilla, then combining it with egg yolks, sugar, and cornstarch until thickened.
  • Make small wells in each bun, fill with custard, and bake until golden.
  • Let cool, dust with powdered sugar, and serve warm.

  • Use fresh raspberries if preferred.
