Ingredients

½ cup natural peanut butter

¼ cup honey (or maple syrup for vegan)

¼ teaspoon salt

¼ cup coconut oil

1 teaspoon vanilla extract

2 tablespoons cocoa powder

1 cup quick-cooking oats

¼ cup shredded unsweetened coconut (or more oats)
Instructions

Line a baking sheet with wax or parchment paper.

In a medium saucepan over medium-low heat, melt peanut butter, honey, salt, and coconut oil until smooth.

Remove from heat. Stir in vanilla and cocoa powder until fully combined.

Mix in oats and shredded coconut.

Scoop tablespoons of mixture onto the prepared sheet.

Chill in the fridge for 30 minutes or freezer for 15 minutes until set.
