  • 8 oz noodles (lo mein, spaghetti, or rice noodles)
  • 1 tbsp olive oil
  • ½ cup onion, diced
  • 1 cup shredded carrots
  • 3 cloves garlic, minced
  • 2 green onions, chopped (for garnish)
  • 1 tsp sesame seeds (optional)

For the Sauce:

  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar or honey
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp cornstarch + 2 tbsp water (to thicken)

Instructions

  • Cook the noodles according to package instructions. Drain and set aside.
  • Brown the beef in a large skillet with olive oil over medium heat. Drain excess fat.
  • Sauté garlic, onion, and carrots until fragrant and softened.
  • Prepare the sauce by whisking together soy sauce, brown sugar, hoisin sauce, rice vinegar, and red pepper flakes.
  • Add the sauce to the beef, followed by the cooked noodles. Stir well.
  • Thicken with cornstarch slurry, stirring until the sauce coats everything evenly.
  • Garnish with green onions and sesame seeds, then serve hot.
