- 1 can (20 oz) crushed pineapple, drained
- 1 cup mini marshmallows
- 1 box (3.4 oz) instant vanilla pudding mix
- 1 tub (8 oz) whipped topping (like Cool Whip)
- ½ cup chopped pecans (optional)
- ½ cup shredded coconut (optional)
Instructions
- Drain the peaches and chop them into bite-sized pieces. Drain the crushed pineapple well.
- In a large mixing bowl, whisk the instant vanilla pudding mix with the pineapple juice until smooth and slightly thickened.
- Gently fold in the whipped topping to create a light and fluffy texture.
- Add the chopped peaches, crushed pineapple, and mini marshmallows, mixing gently to coat everything evenly.
- If using, stir in the chopped pecans and shredded coconut for added texture.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
- Serve chilled and enjoy!
Notes
- For extra flavor, add a dash of cinnamon or nutmeg.
- Fresh peaches can be used instead of canned when in season.
