Mexican Lasagna is a delicious Tex-Mex casserole featuring layers of tortillas, seasoned meat, black beans, melty cheese, and flavorful toppings. Perfect for a family dinner or meal prep, this dish is easy to make and packed with bold flavors.

- 1 lb ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- ¼ cup taco seasoning
- ½ cup water
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (4 oz) diced green chiles
- 1 can (15 oz) black beans, drained & rinsed
- 18 corn tortillas (or flour tortillas)
- 6 cups shredded jack & cheddar cheese
- 1 medium tomato, diced (for garnish)
- 1 bunch green onions, sliced (for garnish)
- Sour cream, for serving
Instructions
- Preheat oven to 350°F and grease a 9×13-inch casserole dish.
- Cook the beef in a skillet over medium heat, breaking it apart. Once browned, add diced onion and cook until softened.
- Add garlic and cook for another minute. Stir in taco seasoning and water, mixing well.
- Add tomatoes, green chiles, and black beans to the skillet. Stir until combined and simmer for 5 minutes.
- Layer the lasagna: Place 6 tortillas at the bottom of the dish, spread ⅓ of the beef mixture over the tortillas, and sprinkle 2 cups of cheese. Repeat two more times.
- Bake covered with foil for 30-40 minutes. Remove foil and bake for another 5-10 minutes until the cheese is bubbly and golden.
- Rest for 10 minutes, garnish with diced tomatoes and green onions, and serve with sour cream.
Notes
- For extra spice, add chopped jalapeños or hot salsa.
- Substitute ground turkey or shredded chicken for a lighter version.
- This dish can be made ahead and stored in the refrigerator before baking.
