Description

Mexican Lasagna is a delicious Tex-Mex casserole featuring layers of tortillas, seasoned meat, black beans, melty cheese, and flavorful toppings. Perfect for a family dinner or meal prep, this dish is easy to make and packed with bold flavors.

  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • ¼ cup taco seasoning
  • ½ cup water
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (4 oz) diced green chiles
  • 1 can (15 oz) black beans, drained & rinsed
  • 18 corn tortillas (or flour tortillas)
  • 6 cups shredded jack & cheddar cheese
  • 1 medium tomato, diced (for garnish)
  • 1 bunch green onions, sliced (for garnish)
  • Sour cream, for serving

Instructions

  • Preheat oven to 350°F and grease a 9×13-inch casserole dish.
  • Cook the beef in a skillet over medium heat, breaking it apart. Once browned, add diced onion and cook until softened.
  • Add garlic and cook for another minute. Stir in taco seasoning and water, mixing well.
  • Add tomatoes, green chiles, and black beans to the skillet. Stir until combined and simmer for 5 minutes.
  • Layer the lasagna: Place 6 tortillas at the bottom of the dish, spread ⅓ of the beef mixture over the tortillas, and sprinkle 2 cups of cheese. Repeat two more times.
  • Bake covered with foil for 30-40 minutes. Remove foil and bake for another 5-10 minutes until the cheese is bubbly and golden.
  • Rest for 10 minutes, garnish with diced tomatoes and green onions, and serve with sour cream.

Notes

  • For extra spice, add chopped jalapeños or hot salsa.
  • Substitute ground turkey or shredded chicken for a lighter version.
  • This dish can be made ahead and stored in the refrigerator before baking.
