  • 2 boneless, skinless chicken breasts (thinly sliced)
  • Salt & pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 ½ cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon red pepper flakes (optional)
  • 10 oz cheese tortellini (fresh or frozen)
  • Fresh basil for garnish

Instructions

  • Season chicken with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  • In the same skillet, sauté minced garlic and sun-dried tomatoes for 1 minute.
  • Pour in chicken broth, then stir in heavy cream, Parmesan cheese, and red pepper flakes. Simmer for 2-3 minutes.
  • Add tortellini to the skillet and cook in the sauce for 5 minutes until tender.
  • Slice the chicken and return it to the skillet, stirring to combine.
  • Garnish with fresh basil and serve warm.
