  • 2 cups boiling water

  • 1 (8 oz) package cream cheese, softened

  • 1 (20 oz) can crushed pineapple (with juice)

  • 1 (16 oz) container whipped topping (use 12 oz for fluff, 4 oz reserved for topping)


Instructions

  • In a medium bowl, dissolve lemon Jello in boiling water. Let cool for 20 minutes.

  • In a large bowl, beat cream cheese and crushed pineapple (with juice) until mostly smooth.

  • Slowly add the cooled Jello to the cream cheese mixture. Mix until well combined.

  • Fold in 12 oz of whipped topping and blend until fluffy.

  • Pour into a serving bowl or dish, cover, and refrigerate for at least 4 hours.

  • Top with reserved whipped topping and garnish with fruit or berries if desired.

Notes

  • Do not drain the pineapple juice—it adds flavor and helps with consistency.
