Description

A light and refreshing soup featuring tender shredded chicken, orzo pasta, and a bright lemony broth. Perfect for a cozy meal or meal prep.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • Juice of 12 lemons
  • Salt & pepper to taste
  • 2 tbsp fresh parsley (for garnish)
  • 1 tbsp olive oil

Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onions, garlic, carrots, and celery for 3-4 minutes.
  • Add oregano, thyme, salt, and pepper. Pour in chicken broth and bring to a boil.
  • Stir in orzo and shredded chicken. Simmer for 10 minutes until orzo is tender.
  • Add fresh lemon juice and stir well.
  • Garnish with fresh parsley and serve warm.

Notes

  • Use rotisserie chicken for convenience.
  • For a creamy version, stir in ½ cup of heavy cream at the end.
  • Swap orzo for rice or quinoa for a gluten-free option.
