- 2 cups cooked, shredded chicken
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 6 cups chicken broth
- 1 cup orzo pasta
- 1 tsp dried oregano
- ½ tsp dried thyme
- Juice of 1–2 lemons
- Salt & pepper to taste
- 2 tbsp fresh parsley (for garnish)
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, garlic, carrots, and celery for 3-4 minutes.
- Add oregano, thyme, salt, and pepper. Pour in chicken broth and bring to a boil.
- Stir in orzo and shredded chicken. Simmer for 10 minutes until orzo is tender.
- Add fresh lemon juice and stir well.
- Garnish with fresh parsley and serve warm.
Notes
- Use rotisserie chicken for convenience.
- For a creamy version, stir in ½ cup of heavy cream at the end.
- Swap orzo for rice or quinoa for a gluten-free option.
