Description

This easy and comforting lasagna soup has all the classic flavors of traditional lasagna but in a simple, one-pot soup form. It’s loaded with hearty ground beef, a rich tomato broth, tender pasta, and a cheesy topping. Perfect for busy weeknights, this dish comes together in under 40 minutes and is great for meal prep.


Ingredients

  • 12 tbsp olive oil
  • 1 lb ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes (with juice)
  • 1 (15 oz) can tomato sauce
  • 3 oz tomato paste
  • 4 cups chicken broth
  • 12 cups water (as needed)
  • 1 tbsp Italian seasoning
  • 1 tsp sea salt (adjust to taste)
  • Black pepper, to taste
  • 8 oz bowtie pasta

Toppings:

  • ½ cup ricotta cheese
  • 2 oz shredded mozzarella
  • ¼ cup grated Parmesan
  • ¼ cup fresh parsley, chopped

Instructions

  • Cook the Base: Heat olive oil in a large pot over medium-high heat. Add ground beef, onions, and garlic. Cook until beef is browned. Drain excess fat if needed.
  • Build the Flavor: Stir in diced tomatoes, tomato sauce, tomato paste, broth, Italian seasoning, salt, and pepper. Bring to a simmer for 5 minutes.
  • Cook the Pasta: Add bowtie pasta and bring the soup to a boil. Reduce heat and simmer for 10-15 minutes, stirring occasionally. Adjust thickness with extra water if needed.
  • Serve & Garnish: Ladle soup into bowls and top with ricotta, mozzarella, Parmesan, and fresh parsley. Serve hot.

Notes

  • Substitute ground beef with ground turkey or plant-based protein for a leaner or vegetarian version.
  • For a spicier kick, add red pepper flakes or cayenne.
  • If freezing, leave out the pasta and add freshly cooked pasta when reheating.
