Description
These Korean BBQ Meatballs are coated in a sweet, savory, and slightly spicy glaze, then served with a creamy spicy mayo dip. Perfect for an easy appetizer, meal prep, or dinner over rice.

For the Meatballs:
- 1 lb ground beef (or turkey)
- 2 cloves garlic, minced
- 2 green onions, chopped
- 1 egg
- ½ cup panko breadcrumbs
- 1 tbsp soy sauce
- 1 tsp honey
- ½ tsp red pepper flakes (optional)
For the Korean BBQ Sauce:
- ¼ cup soy sauce
- 2 tbsp honey or brown sugar
- 1 tsp garlic, minced
- 1 tbsp rice vinegar
- 1 tsp gochujang (Korean chili paste)
- 1 tsp sesame oil
For the Spicy Mayo Dip:
- ¼ cup mayo (or Greek yogurt)
- 1 tbsp sriracha
- 1 tsp lime juice
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix the meatball ingredients in a bowl until combined. Roll into 1-inch balls and place on the baking sheet.
- Bake for 15-18 minutes until fully cooked.
- Make the sauce by simmering soy sauce, honey, garlic, rice vinegar, gochujang, and sesame oil in a saucepan for 2-3 minutes.
- Toss meatballs in sauce until fully coated.
- Prepare the spicy mayo by mixing mayo, sriracha, and lime juice.
- Serve & enjoy! Garnish with sesame seeds and green onions.
Notes
- Use ground turkey for a leaner option.
- Adjust spice level by increasing or decreasing gochujang and sriracha.
- These meatballs can be made ahead and stored in the fridge for up to 4 days.
