Description

These Korean BBQ Meatballs are coated in a sweet, savory, and slightly spicy glaze, then served with a creamy spicy mayo dip. Perfect for an easy appetizer, meal prep, or dinner over rice.

For the Meatballs:

  • 1 lb ground beef (or turkey)
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 1 egg
  • ½ cup panko breadcrumbs
  • 1 tbsp soy sauce
  • 1 tsp honey
  • ½ tsp red pepper flakes (optional)

For the Korean BBQ Sauce:

  • ¼ cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tsp garlic, minced
  • 1 tbsp rice vinegar
  • 1 tsp gochujang (Korean chili paste)
  • 1 tsp sesame oil

For the Spicy Mayo Dip:

  • ¼ cup mayo (or Greek yogurt)
  • 1 tbsp sriracha
  • 1 tsp lime juice

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Mix the meatball ingredients in a bowl until combined. Roll into 1-inch balls and place on the baking sheet.
  • Bake for 15-18 minutes until fully cooked.
  • Make the sauce by simmering soy sauce, honey, garlic, rice vinegar, gochujang, and sesame oil in a saucepan for 2-3 minutes.
  • Toss meatballs in sauce until fully coated.
  • Prepare the spicy mayo by mixing mayo, sriracha, and lime juice.
  • Serve & enjoy! Garnish with sesame seeds and green onions.

Notes

  • Use ground turkey for a leaner option.
  • Adjust spice level by increasing or decreasing gochujang and sriracha.
  • These meatballs can be made ahead and stored in the fridge for up to 4 days.
