1. Marinate Chicken: In a bowl, combine honey, soy sauce, minced garlic, olive oil, rice vinegar, and ground ginger (if using). Whisk together until well combined. Add the chicken thighs and coat them liberally in the marinade. Cover and let marinate for at least 15 minutes, or up to 2 hours for deeper flavor.

2. Preheat Oven: Preheat your oven to 400°F (200°C) for optimal cooking.
